Toku, which means Virtue in Japanese, represents the vision of restaurateurs Gillis and George Poll, together with renowned architects Bentel & Bentel. "Our goal is to bring a world-class modern Asian restaurant to the heart of the North Shore of Long Island” proudly states Gillis Poll.
The Toku culinary team is lead by Osaka born Executive Chef Tomo Kobayashi, who has over 25 years of professional restaurant and hotel experience. Second in command in the kitchen is New York born Sous Chef Jeffrey Scala and manning the Sushi Bar is Osaka born Chef Shohei Moriya.
The modern Asian concept embraces a variety of different cooking styles including Japanese, Chinese, Thai, and Vietnamese. The ingredients span an international marketplace melding the flavor and texture of traditional Asian cooking with a modern flair. Guests will enjoy an assortment of appetizers including Toro Tartar and Steamed Sea Bass Rolls. Dishes to look forward to include Peking Duck Salad, Braised Short Ribs with Mushroom Chow Fun and Bronze Broiled Miso Black Cod. Toku also features a large selection of premium Sake ranging in flavors from light and smooth to a unique sparkling tropical Sake called Poochi Poochi.
The restaurant is adorned with natural daylight in the daytime and dramatic lighting at night. "We used natural materials throughout to create a warm, sophisticated environment that is classic and timeless in design,” explains Bentel. "The stone, slate, wood, and metals blend effortlessly to create a natural pattern of texture and color”. The Asian spirit of Ying and Yang is captured in the contrast of white leather banquettes with dark wood floors and reflective surfaces set against rough textures.
The Sushi Bar is sculpted from a translucent marble stone that is illuminated by indirect lighting. In addition, Toku has a beautiful private dining room that can accommodate up to 40 guests.
Toku’s decor includes unique artwork, including three large, antique wooden Temple bells imported from Thailand and a large sculpted Buddha head. Adorning the walls are modern paintings by Sal & Nancy Moccia, inspired by the work of contemporary Chinese artist Li Jin.
